My Very First Giveaway!

Boo!

Did I scare you?! Yeah, I know, I need to work on it. I’ve just got Halloween on the brain, since Matty and I went costume shopping today.

Breakfast

This morning, I enjoyed a new overnight oats creation, and the result was perfect. I don’t take the word “perfect” lightly, friends, but when apple butter is involved, it’s sort of impossible to go wrong.


I prepped my oats last night using 1/2 cup Country Choice organic oats, 1/4 cup unsweetened almond milk, 1 generous splash of Silk pumpkin spice soymilk, and 2 Tbsp. of Kime’s apple butter spread. I stirred it all together and let it sit in the fridge overnight. The end product? To be honest, visually speaking, it slightly resembled regurgitated food.

I know, now you really want some. Way to ruin everything, Heather.

But if you don’t make this, your life will be ruined. There, we’re even. And yes, it is that delicious.  ;-)

Lunch

One of my favorite things about Friday is coming home and having the freedom to eat whatever I want. Due to Methusaleh’s small stature, my options are more limited at school. Coming home means creating delicious, healthy meals on my terms (take that, Methusaleh!).  Today’s lunch was one for the books and came together in less than 30 minutes!

I present to you pizza toasters and garlicky sweet potato fries:

First, I preheated the oven to 450 degrees, sliced up a small sweet potato, and sprayed a baking sheet with PAM Olive Oil Cooking Spray. Next, I placed the sweet potato slices onto the tray, sprayed them with PAM, and sprinkled them with dried minced garlic and black pepper. I let them bake at 450 degrees for 15 miniutes, turning once at the 7:30 minute mark. They were soft and chewy – just the way I like them! (Note: if you like crispy fries, leave them in for 20 minutes and turn once at the 10 minute mark).

Please note how the organic ketchup has its own designated mini dish. I’m not ashamed. 8-)

For the pizza toasters, I lightly toasted 2 slices of Ezekiel bread and topped each slice with a dab of Earth balance, my mom’s homemade marinara sauce, and a generous sprinkle of nutritional yeast.

This meal is so simple, but is also one of the better cooked meals I’ve made in awhile!

Daily Musings

This afternoon, Matty and I had some serious business to attend to: shopping for our Halloween costumes! We are actually both being the same person. One of us is being this person from the past and one of us is being this person from the present. First, we headed to Savers to assemble whatever we could for a cheap price. Naturally, we got a little sidetracked.

While Savers was a huge success, I didn’t find the right bottoms so we went to TJ Maxx and Express to complete my outfit! We got sidetracked again at TJ Maxx and Matty ended up buying me the most adorable owl mug. He’s a keeper.

love owls, especially trinkets and kitchenware featuring owls. This is why Pinterest has become an uber distraction lately. I literally search the term “owls” once a day. Danger zone, people.

Well, three hours of costume-hunting allowed us to work up quite the appetite. So, we did the predictable thing: hit up Whole Foods and Wildflour in one fell swoop! We picked up some dinner for later at Whole Foods and grabbed a few delicious goodies at Wildflour.

Yes, those are vegan pumpkin chocolate chip cookies.

Dinner

We saved the cookies for later in favor of not spoiling our dinner. Believe me, it took lots of self control and listening to City & Colour. Nevertheless, it was worth it and 25 minutes later, dinner was served! I enjoyed a plate of Kung Pao Seitan, marinated kale (!!!), roasted fall vegetables (parsnip, spiced pumpkin, and beets), and roasted broccoli.
