Hey lovelies! Thanks so much for your patience over the past couple of days. Once finals are over, things will be less hectic over here in Kale land. A lot of self-coaching has been going on up in here! With all of these science courses, it’s really easy to get down on yourself for not understanding the concepts. I constantly have to remind myself that it won’t come to me overnight. It’s a working progress.
Now, onto today’s eats!
Breakfast
This morning’s meal was prepped last night. I love making overnight oats because zero effort is required the following day. Wham, bam, thank you, ma’am!
Looks like vomit. Tastes like Heaven. I blame the flourescent lighting.
I combined the following into the bowl to create a pudding-like bowl of oats:
- 1/2 cut old fashioned oats
- 1/4 cup pumpkin
- 1/4 cup almond milk
- 1 Tbsp. chia seeds
- small handful of raisins
- A few shakes of cinnamon
It tasted like a healthy dessert! Mmm mmm good.
After breakfast, I printed out an assignment and headed off to class. My professor let us out early (score!) so I got to come back to my dorm earlier to crank out one of three articles I need to finish before Tuesday afternoon.
Lunch
Eventually, I took a break to eat lunch and watch old One Tree Hill episodes. My love for that show will never fade. Yes, I still watch it. I mean…really…can one ever grow tired of seeing Chad Michael Murray’s gorgeous face?

And in case you’re wondering, episodes return in January. You’re welcome.
Anyways, back to lunch! I enjoyed a salad with avocado and Annie’s Papaya Poppyseed Dressing. I also munched on a Whole Foods whole wheat pita the size of my head.
This pita bread is so satisfying. I love to slop up all the leftover dressing and dip them in some ketchup. Gross? Maybe. No shame, people, no shame.
Workout
According to Hello Giggles, today is National Bestie Day! I decided to celebrate by bringing my friend Kristen along with me to the gym. I took her through the latest total body workout and made her body feel like jello.

Dinner
Dinner tonight was quick and simple! I microwaved some frozen veggies and topped them with a blend of quinoa, chopped peppers, diced red onion, and a few dried cranberries.
Sometimes, there’s nothing better than a simple dinner with simple flavors!
Where Do You See Beauty?
I’ve been in a somewhat “complainy” state lately. God bless Matty for listening to me every day. He really is a saint. Anyways, I’ve been complaining, whining, and crying about school. It brings me a lot of stress and I often feel like my workload is so intense that I won’t be able to complete all of my studying and assignments. I always get everything done, but the anxiety still piles on.
I’ve been praying a lot and every time I step outside my dorm room, I’ve been making a point to find the beauty in life; in the simple things right outside my door.

- I see beauty in the way the paint is slightly chipped on the wall adjacent to my door. Its imperfection reminds me I don’t have to attain perfection.
- I see beauty in the healing power of music. The sounds send chills of comfort up my spine.
- I see beauty in the eyes of someone hysterically laughing. No shame in being silly!
- I see beauty in kindness. The cashier at the school cafe gave me a free coffee last week when my debit card wasn’t working.
- I see beauty in YOU! I’m seriously grateful that you take the time to read this little blog. We all have a voice and I’m grateful you take the time to read my daily thoughts.

I too see beauty in people laughing. The totally uninhibited kind.
