Blissful Bites Cookbook Review

Happy Saturday, loves! How is your weekend so far? With the exception of this morning’s workout, I have literally been studying all the live long day. In short, my brain is fried. Is it really 6:00 p.m.? Oy vey!

Workout

I started this morning with an early bird workout! I alternated between one circuit of the Tone It Up Lean Arms Pyramid and 10 minutes on the stationary bike. I completed the whole she-bang two times and I was a happy, sweaty beast!

Breakfast

This morning’s meal was a continuation of the new Wildflour tradition. I enjoyed my beloved mushroom-spinach scone and a microwaved apple. 

Two things: 1.) This scone is the one of the best breakfasts in the entire world. I wish you could enjoy it too! 2.) Microwaved apples are underrated. They’re soft, delicious and fantastic.

This meal was perfect fuel for a morning full of studying. There is so much information to know for tomorrow’s exam and I’m a bit nervous but I can only do my best, right? Right!

Blissful Bites

After a few hours of studying, I decided to take a break and make some lunch – but not just any kind of lunch.

A little while ago, I was contacted by the lovely and talented Christy Morgan, who recently released a new cookbook, “Blissful Bites.” The name certainly suits the book well, but more on that in a minute. Back to Christy! She is a trained vegan chef and her work has been featured in super star vegan publications like VegNews magazine and super star podcasts such as Our Hen House. “Blissful Bites” has also received praise from the likes of Colleen Patrick-Goudreau, Kris Carr and Rory Freedman. In other words, Christy is a total vegan gem!

Flipping through the book, I immediately wanted to make everything in sight. Once my head stopped spinning, I finally decided on two dishes: mac n’ kale salad and quinoa tabouli.

I know, friends, I know. The combination of apricot and fresh mint in the above dish is unbelievable. I was swooning.

Mac n’ kale salad might be my new favorite way to enjoy kale. Yup.

If these two recipes are any indication of the rest of the cookbook, I am SOLD! Bonus: both recipes took me just 20 minutes to make, which was perfect for my busy day of studying. I’m thinking a pumpkin hot chocolate is in my future (yep, that’s in there too!).     I seriously wish there was a place that served scones like that near me. Mushroom-Spinach AND vegan…It doesn’t get much better than that.
    I’ve seen the Blissful Bites cookbook but hadn’t heard anything about it. I’m glad to hear that the recipes you’ve tried were such a success! I’m definitely going to have to pick up a copy next time I see it. I mean, mac n’ kale? Yes, please!

    Totally checking that cookbook out, and I can’t wait to read the interview! The Mac ‘n Kale looks so good and it reminded me of my favorite mac ‘n cheeze recipe I have ever made in my entire entire life.     And you gotta put kale in it. You gotta. It’s a hit with the masses, too. I made it for dinner one night for my 17-person co-op and my housemates said it was the best meal we’d had all YEAR (and that is seriously insane because we have amazing cooks in our house)! You should definitely make it for Matty.

    I’ve got a whole day (two days!) of studying ahead of me as well. I dare say I would rather be studying nutrition rather than plant biology right now. Not that I don’t love plants (obviously). Oh, pre-requisites. Good luck on your exam!! Do you always have tests on Sundays?

      Oh, yes! Love Oh She Glows! And your version of her mac n cheese looks so delicious! I just might have to make it now. :-) I do have exams every Sunday (gross)…it’s really tough but what can ya do? Good luck with your studying too, dear!
