Hey, beautiful people! I’m writing this post with the Rosie Thomas Pandora station playing gently in the background. Lately, this has been my go-to station of choice. It’s so soothing!
Workout
So, I know that I promised all of you a new lower body and abs workout but, alas, I do not have one for you. To be quite frank, my brain was not working last night and I found myself falling asleep while trying to plan the workout. I took that as a sign to put it on the back burner in favor of sleep. I quickly jotted down a workout and got a glorious eight hours of sleep!
This morning, I completed a 30-minute interval workout on the treadmill and followed it up with my favorite Tone It Up lower body and abs workout. It worked like a charm. Warning: IT BURNS! For some extra ab-alicious fun, I’m participating in my dear friend Bess’ 500 Rep Challenge! Today, she challenged us to 500 repetition of abdominal work and I humbly accepted. I’m almost done!
Lunch
Throughout the morning, I worked on an op-ed piece for The Gatepost (FSU’s student newspaper). Around 1:00 p.m., I decided to get out of my dorm room and go to the dining commons for lunch.
Today’s midday meal was one that left me feeling perfectly satisfied. The flavors were simple and fresh – just how I like ‘em! I munched on warm bok choy sauteed with oyster mushrooms (that name always freaks me out), carrots and celery. I also made a salad with tomatoes, peppers, black beans and cucumbers, tossed in a fresh mint vinaigrette. It was so heavenly.
One assignment and one class later, it was time for dinner!
Dinner
I met my friend Kristen for dinner after she got out of her evening Zumba class (she is obsessed with it!). We wined and dined – minus the wine. Lemon-infused water was our drink of choice. Anywho, dinner was quite delicious!
I piled my plate with veggie goodness. As soon as I saw the mint cucumber salad, my heart skipped a beat. It’s the little things, people! I also munched on cauliflower and split pea mash (the light green, mushy stuff), sauteed spinach and three bean salad, in addition to a cup of roasted mushroom-barley soup. I went back for seconds of both the spinach and mint cucumber salad.

I thought the cauliflower and split pea mash was edamame hummus, it looks just like the edamame hummus I had on Monday night, but that sounds super interesting too. The mint cucumber salad and chickpeas would STOP my heart, not make it skip a beat. Mmm, so yummy to eat well!
