Okay, I’m just going to dive head-first into some good news. I MADE IT TO ROUND THREE OF THE INTERNSHIP PROCESS! This lady has a phone interview at 8:30 a.m. on Tuesday! Regardless of what happens, I feel so blessed to have gotten this far. I cried tears of joy twice this morning. TWICE! This is my dream internship so it’s totally overwhelming – but in the best darn possible way. I can’t wait to reveal the company to you. But, for now, we can recap the two hints I’ve given you thus far: California and editorial. Good freakin’ luck guessing!
Workout
I woke up with a goofy smily plastered on my face (how is that possible?), jumped out of bed, and headed out to the gym. To start, I completed the HIIT the Beach routine from the Tone It Up Beach Babe DVD. I don’t think I’ll ever get sick of that one. Afterwards, I went through three circuits of a really challenging ab routine. I was on cloud nine last night when I received the news, so I think that played a role in my decision to completely wear my abs out.
After sufficiently fatiguing my bod pod, I called it a day. It’s amazing what 35 minutes of intensity can do!
Lunch
Living in a single dorm room can be stifling at times. My school is a bit different – there are a lot of commuter students and everyone sort of marches to the beat of their own drum. That being said, I felt like I needed a change of scenery. What better place to go than Whole Foods?
Free WiFi? Check.
Insanely delicious eats? Double check.
I ordered a side of sesame-tahini greens from the prepared foods counter and made myself a delighful salad. Into the eco-friendly container went greens, roasted eggplant, cherry tomatoes, shredded carrots, and falafel. I topped it with lemon-parsley vinaigrette and Bragg’s liquid aminos. As expected, it was phenomenal. I also caved and purchased another kombucha. I’ve discussed my attempt to like kombucha on the blog before (it was an epic fail) but decided to try again when I saw the overly priced beverage was on sale.
Folks, we have a winner!
The guava goddess is so, so, so amazing. I cherished every last sip! Have you tried this flavor? If not, I suggest you get your behind on it!
I worked away at Whole Foods and the remainder of the afternoon was spent finalizing a business plan project with two of my classmates. We’re presenting our project to our Foodservice Management class on Monday, so we really needed to finalize everything.
Dinner Date at Rice Barn
Tonight, I got to see this guy.

I missed Matty to pieces, so when he told me that he could make it up for dinner on Thursday, I was so excited! In celebration of scoring the phone interview, Matty suggested we go to Rice Barn to celebrate. Side note: I think he’s getting a little ahead of himself, but his offer was so sweet I couldn’t refuse! Anyways, off we went to celebrate.
Rice Barn is a really special place. Aside from serving up insanely delicious Thai and Asian cuisine, the atmosphere is calm and inviting. I remember walking into the restaurant this Winter with Matty and immediately feeling at ease. As Michael Buble (siiiigh) played in the background, the staff flashed us genuine smiles, and we were seated at candlelight. I always feel at home there. It’s a little gem!
Tonight, I ordered the mushroom-tofu wraps which come with crushed peanuts and a side of a special, housemade Thai vinaigrette. Aside from the rice wraps (not a huge fan), I gobbled it all up!
Those shitake mushrooms are to die for. I would literally go to Rice Barn just to eat an entire plate of those mushrooms. Matty opted for an unpictured tofu pad thai. Whoops! Anywho, we chatted all things California-related and got really excited then brought ourselves back down to earth by jammin’ out to the 90′s Pandora station on the way back to FSU. Twice in one week, baby!

My favorite is Strawberry Serenity. It’s only $3.99 here at Fred Meyer or Kroger if you have one in your area. Still expensive but it’s a dairy-free alternative to get probiotics.
Oooh, I’ll have to give that one a shot next! I don’t have any Fred Meyer or Kroger stores around me, so I’ll just have to wait until they go on sale agai!
