Happy Friday, friends! How are ya? I’ve been indoors all day doing homework and just finished an exam, so my eyes are semi-bugging out of their sockets. You’re welcome for that visual.
Workout
This morning began with a short-and-sweet workout. After 5 minutes of steady biking, I busted through a 15-minute Tabata-inspired workout. For those of you that are not familiar, Tabata is a method of interval training that consists of eight rounds of 20 seconds of all-out intensity followed by 10 seconds of rest. Well, I took it a step further and created this bad Larry. It really skyrockets your heart rate! Hence the name…
I followed this workout up with a good water break, some leg work and lots of hip flexor stretching. Side note: As a result of the above title, I now have “Heartbeat” by Enrique Iglesias & Nicole Scherzinger in my head. Womp womp.
Snack
I don’t often show you guys what my snacks look like. So, why not today? When I’m at home, I always feel so fortunate because I can be a little more adventurous with my in-between meals. Today’s mid-morning snack was a total winner.
I enjoyed half of a large sweet potato (seriously – it was practically the size of my head!) on top of a spinach bed and coated with nooch sauce. Iron, vitamin A, folate, fiber and 20 grams of protein? Check times five! Most importantly, it was absolutely delicious. The nooch sauce really took it over the top!
Lunch
A few hours later, I was ready for lunch! I ultimately decided on leftovers because a.) it’s what I was craving and b.) we’re running out of food in my house! The spinach is officially gone and we have NO kale. Enough said.
Into the bowl went the remainder of spinach, red pepper, avocado and peach salsa. Topped with a leftover Tone It Up garbanzo bean pattie and garnish with the other half of the sweet potato, I was in lunchie heaven. Also, I can’t ever get sick of sweet potatoes. Actually, I kind of want one for dinner now…
Vlog Fail
Well, I was supposed to have a video up for you but it’s not uploading! I’m so sorry. A new Five Friday Favorites is on its way – I promise. Until then, I’m off to enjoy an evening with my bestie. We haven’t spent quality time together in so long! Girl chats and lots of laughs are on the horizon! Have a great night. Hope you’re spending time with people you love too!

The peach salsa with the sweet potato sounds like such an interesting flavor combo! Mentally storing away that one…
Have you ever tried a sweet potato with peanut butter? OMG it’s good.
NO. But that sounds incredible. Happening stat.
Try it with almond butter sauce too – thin out some almond butter with some almond milk, sprinkle in some cinnamon/nutmeg…you will love it!
