Looks like some of you are preppin’ up a storm! I am loving all of your Tweets and Facebook posts about chocolate protein pudding oats. You are seriously warming my heart. Poppy made them for her entire family this morning! Now that’s what I call spreading the love.
Kim topped her pudding oats with fresh fruit! Yum.
Nicole’s precious daughter said she can’t wait to eat it “every day!” Kid approved? Now we know it’s legit.

Workout
This morning’s workout was another doozy. I completed three rounds of ZWOW #9 in 15 minutes. I think that officially makes me a warrior, right? Nevertheless, 15 minutes was all I needed to make me feel strong and energized!
Breakfast
When I saw some of the beautiful tweets and posts featuring homemade chocolate protein pudding oats creations, I decided to up the ante on my own. It’s the gift that keeps on giving!
I added one heaping scoop of MILA to the mix and topped everything with coconut flakes (in the shape of a starfish?). I owe props to my mom for the coconut flakes idea. She’s so crafty! Served with fresh berries and watermelon, I was in breakfast bliss. Per usual.
MORE Exciting News!
The rest of the day was spent cooped up in the library. You see, I have progressed onto the second round of the interview process for the internship that I applied for out in California. I am over-the-moon excited but trying not to get my hopes up – just trying to stay grounded and grateful for having gotten this far! As a result of moving on, I have a sizeable project due on Tuesday, and the company will be basing their decision of who to interview off of this project. It’s a big deal!
So, I did what I always do: put my game face on, grabbed my laptop, and, in good conscience, armed myself with brain fuel.
Obviously, one beverage wouldn’t do the trick. Why not three? Water? Check. Coffee? Check. ZICO? Check.
Insanely delicious salad? Check.
Today’s lunch was another homemade salad that I didn’t want to end. Ever. Into the Tupperware container went romaine, cabbage, red peppers, carrots, avocado, and edamame. I topped the veggies with nutritional yeast, 1/2 a lemon, and Trader Joe’s Spicy Peanut Vinaigrette. Side note: lemon on my salads has totally been my jam lately. I can’t get enough!
One exam (yes, I had an exam on a Saturday) and lots of writing later, my brain was sufficiently fried. I packed up my things and went to church to clear my head. Works every time. Today was First Communion, so I got to see all of the adorable little ones receive their bread and wine. I actually wanted to steal this one girl’s communion dress for my wedding. I know that sounds strange, seeing how said girl is only 7 years old, but it really was so beautiful! I thought about asking to take her picture but then I realized that would be both inappropriate and creepy.
Dinner
After church, I was ready for some dinner. I kept it simple with pineapple-teriyaki tempeh and Brussels sprouts a la porch.
Oh yes. The sun was beating down on me while I munched and finished reading this month’s issue of FITNESS. Fantastic.
Okay, well that’s it for me today, loves! I’m off to get ready for a night of dancing in Providence. Our favorite cover band is playing and I hear a glass of pinot grigio calling my name. It’s gonna be a good night.

I couldn’t agree with you more about lemon on salads. I do lemon and nutritional yeast and usually a spoonful of hummus and fresh salsa. What an epic combo!! Lemon adds just a simple yet amazing freshness!
