Random Sunday Happenings

‘Ello loves! How are ya? I am POOPED. Today has been jam-packed but good!

This morning, I taught the signature class at Mind Body Barre. I really tried to challenge our clients and I think that mission was accomplished. I’ve said it before and I’ll say it again – we have the best clients ever! They always push themselves and are so kind. I feel so blessed to be able to teach them from time to time. :-)  

Before class, Matty and I stopped at a nearby bakery. We were there super early because I forgot that I was teaching at 9:30 a.m. instead of 8:30 a.m. (whoops!), so I asked Matty if he wanted me to treat him to breakfast. I munched on an unpictured orange and bowl of protein oats while Matty devoured a chocolate chip muffin.

It was a quaint, little Mom and Pop bakery – very American style. The lady who rang us out was so sweet and even though she didn’t really wait on us, I wanted to give her a tip. Unfortunately, their debit card machine wouldn’t take tips. I felt so bad!

Afterwards, I went grocery shopping and picked up fruit, veggies, hummus, tofu, tempeh, and…kombucha!

I also prepped for the week and made roasted Brussels sprouts, sweet potatoes, quinoa, and Tone It Up black bean burgers. This girl is STOCKED! I love prepping. 

In my prepping travels (that doesn’t make sense does it?), I made a delicious little snack!

I simply took romaine lettuce leaves and stuffed them with black bean burger crumbles and salsa. I topped two of them with Tribe’s Forty spices hummus for an extra kick. Such a good idea. This was the perfect afternoon mini meal to tide me over until dinner!

Now, I’m sitting in the computer lab at FSU with my management group. We’re working on our business plan that is due tomorrow. I’m sorry to cut ya short but I have to get crackin’. There is so much work to get done! One week from Wednesday, I will be HOME FREE!

    Argh management group work, sounds not fun, I have been doing plenty of that this semester. Lettuce wraps lookin’ fly girly.
