Popping In!

Well, hey there! Happy Fourth of July Eve. I hope you’re gearing up for a fun day of fireworks and good company. In a few hours, I’ll be heading down to Narragansett Beach with my friend Raquel and her boyfriend Kiel. Matty plans to meet up with us later tonight when he gets out of work. We’re staying at Kiel’s beach house and, weather permitting, taking the ferry to Block Island tomorrow. Thunderstorms are on the horizon but I’m holding out for sunshine with lots of prayers!

Workout

This morning, I used one of my HIIT days to complete ZWOW #9. It took me about 11 minutes to complete three rounds – that’s 1:30 seconds less than the last time I did it! Feeling like a warrior, I gave my legs a good stretch (pigeon pose, I love you) then headed upstairs to enjoy some breakfast.

Breakfast

Nothing has changed on the breakfast front with the exception of the brand of coffee that I’m using. My dear friend Cait bought me three bags of coffee from Daybreak Coffee Roasters for my birthday (you can read about my love affair with Daybreak here and here). Right now, I’m sipping on the Viennese Cinnamon every morning and it is unreal.

My love affair with Daybreak pairs quite nicely with my love affair with chocolate protein pudding oats. Yep, it’s still happening every morning. No shame!

Lunch

After working at the clinic without a break, I was absolutely famished by the time I got home. I sipped on some water while I prepped lunch to quell my hunger pangs and, in no time, had an amazing lunch to feast upon.

I think it’s time to coin the word saladgasm. Today’s concoction was one for the books! Into the Tupperware container went kale, cabbage, red bell pepper, broccoli, avocado, tempeh, vegan cheddar shreds, and Annie’s Papaya Poppyseed dressing. I also roasted a small sweet potato and squirted a generous blob on organic ketchup on the plate for dipping. Is it strange that I already can’t wait to make this salad again? Blame goes to the saladgasm.

After spending a copious amount of time on the phone with the IRS. Thrilling, I know. Waiting for the IRS really zapped up my time. Thirty minutes? Ridiculousness! At least I was nestled in sunshine on my back porch.

Now, I’m behind on packing so I’m going to get to it. I’ll leave you with this quote:

    Ugh, I hate being stuck on the phone with companies. I swear they take their good ole time and just drag out the call 10x longer than it really needs to be. Hope you have a wonderful 4th of July @ the beach girl :)

    Congratulations on improving your ZWOW time! That’s such an awesome feeling. I just tried one of her workouts for the first time last week- whew! It kicked my butt and I loved every minute of it!
