Thanks for being so understanding yesterday! Rest is so important and when I have the chance to rest with family, it’s hard for me to turn it down! It was a hot and gorgeous day yesterday, so my Dad and I went for a car ride and out to lunch.
My Dad and I have a lot of things in common, one of which is driving around in the warm sunshine and listening to good music. We set out for a day of just that and wound up in Cumberland, RI, the town that I grew up in. We eventually started approaching Phantom Farms and my Dad suggested we stop there to check out the fresh produce.
No arguments from this girl!
I have a lot of fond memories at Phantom Farms with my parents. We used to go there every Fall for apple picking and homemade, piping-hot apple crisp. Phantom Farms harvests a slew of fruits and vegetables and places them outside in wooden bins on their porch. Customers can hand-pick whatever they want before going inside to purchase their items.
We chose a golden yellow squash, red pepper, eggplant, two ears of corn, Russet potatoes, an apple, and…
a celebrity tomato! Yep. I got a kick out of this one and, of course, had to get a picture with the red, sweet, and juicy fruit.
After selecting our produce, we ventured inside and I came across some homemade pumpkin butter! After a squeal of delight and a glance at the inexpensive price sticker, my Dad said he would purchase it for me. It made for a tasty snack for the rest of our car ride. Apple + pumpkin butter = wow.
The two of us enjoyed a late lunch at the British Beer Company. Dad wanted fish but we knew a seafood restaurant was out of the question (the smell makes me very nauseous) so we compromised! Dad got haddock. I got hummus lettuce wraps.
It was the perfect way to cap off our day date.
Workout
It’s hard to believe that I’m already onto week four of my strength training program! Today was shoulders/back day, so I completed my superset workout this morning. This was the first week that I increased my weight, which is super exciting. It feels so good to be strong.
Fiesta Salad with Chipotle-Mayo Tempeh
When I think summer, I think party. I think…fiesta! So, this afternoon, I didn’t exactly throw a fiesta but I made my lunch into one. This salad encompasses everything your run-of-the-mill fiesta should have: color, fun, and lots of flavor! It was all inspired by a new spice that I picked up at Target the other day:
This was my first time seeing this Mrs. Dash seasoning and I immediately became inspired to create a fun salad, bursting with spice and flavor. Let the fiesta begin!
Fiesta Salad with Chipotle-Mayo Tempeh

For the Salad
- 1 tsp. coconut oil
- 1/2 package tempeh
- 2 large handfuls of spinach
- 1/4 red pepper
- 1/4 – 1/3 avocado
- 2 Tbsp. daiya shreds
- 2 Tbsp. salsa of choice (I use Newman’s Own Peach Salsa)
- Generous squeeze of 1/2 lime
For the Chipotle-Mayo
- 2 tbsp. organic, vegan mayonnaise
- 1 tsp. Mrs. Dash Southwest Chipotle seasoning
Instructions
For the Salad
- Sautee tempeh in coconut oil for 5 minutes on each side.
- Combine all salad ingredients together in a bowl.
- When tempeh is done cooking, top with chipotle-mayo and place the slices on your salad.
- Mix it all up for a full-on fiesta in your mouth!
For the Mayo
- Combine vegan mayo with Mrs. Dash Southwest-Chipotle seasoning.
- Stir until well-mixed.
I especially love this salad because it just goes to show that you can use and re-use your favorite, healthy energizing foods without getting bored. All you need is a little something extra (thanks Mrs. Dash!) to keep you feeling satisfied and amazing! I hope you give it a try! I can promise you that it won’t disappoint!

I love Mrs. Dash Southwest Chipotle Seasoning! My brother and his girlfriend are vegan so when they came to vist a few weekends ago, I added this seasoning to vegan mayo and made a little treat for our yam fries! So simple, so delicious! It looks like you had a wonderful day date with your Dad, I am glad you had a day to rest!
