New Vlog: She & Him Cover!

Good afternoon – or evening, depending on when you’re reading this! Hope today is treating you with lots of love and that you’re feeling lots of gratitude. Because you deserve it!

Workout

After six hours of sleep, I woke up foggy-brained and a bit dreary. I knew just what was in order: a workout and lots of water! That, along with extra greens to alkalize my digestive tract, always does the trick! I completed my chest superset workout today and kicked butt – actually, I kicked chest if we’re going to get technical here. It felt awesome to work up a good sweat. I replaced the Lunge & Twist move with kettlebell swings which got my heart rate up a bit. After a good stretch, I was ready to get breakfast in my belly and conquer the day!.

Lunch

Yesterday, I finally went grocery shopping. After returning home from HLS, my refrigerator was lacking in the veggie department but I just rolled with what I had until yesterday, when I finally stopped procrastinating and made the drive to Whole Foods. Matty came along, which is always entertaining. While I food shop, he peruses reddit and interrupts my train-of-thought to show me cute pictures of animals. Boys.

Anyways, while at Whole Foods, I picked up a new variety of Sunshine Burgers.

It has been quite awhile since I’ve had a Sunshine Burger. They’re my favorite vegan veggie burgers because they’re jam-packed with high quality ingredients and help satisfy you for hours. Plus, they’re darn delicious and ideal for when I’m short on time. While they’re quite pricey at $4.49 per box, I was smitten by the words “Hemp & Sage,” and made the executive decision to toss them into my grocery cart. Hey – I still managed to stay within my grocery budget, so whatever! ;-)

This afternoon, when my tummy told me it was time for lunch, I got to work in the kitchen and created a delicious, warm salad in just under 15 minutes.

To start, I popped the Sunshine Burger into the toaster and sauteed a combination of spinach and kale for three minutes on medium-high heat.  Then I threw together a quick garlicky nooch sauce, which served as my dressing of choice. To make the sauce, I combined Tbsp. nutritional yeast, 3 Tbsp. unsweetened Almond Breeze, 1 tsp. Mrs. Dash Garlic & Herb seasoning, and a pinch of both curry powder and mesquite in a small bowl.

I topped my burger with organic sauerkraut and drizzled the garlicky nooch sauce over everything to create a pretty incredible meal. I’ve been borderline obsessed with sauerkraut lately. It’s not uncommon for me to eat a few spoonfuls straight from the jar for no apparent reason…twice a day. Do you hear me, Lori and Michelle?!

    In aweeee of your talent as always. That veggie burger seriously looks so good. I feel like I’ve been spoiled by the veg burgers of places like ION and GG so I never want to buy the frozen variety. It’s like how packaged falafel is never as good as the real thing. But I suppose the frozen veggie burgers are good to have around in a pinch for a quick 15-min lunch like you did today!

    Those sunshine burgers look really good, I hate that all the good veggie burgers (aka the ones without an ingredient list a mile long) are so dang expensive, at least they’re tasty though!

      Aww, Lea you’re so sweet. Thank you!!! I totally agree with you. The more high quality ingredients, the more expensive the product. We have to keep showing our love by purchasing them when we can. Maybe that will drive the price down in the future, you know?
