#plantPOWER Day 1: Eat A Rainbow!

It’s October 1st and the first day of our #plantPOWER challenge! Today’s topic of the day is “eat a rainbow.” Kasey and I are absolutely floored and blown away by all of your #plantPOWER photos. I wish we could all eat with you at every meal!

By eating a diet rich in plants, we’re putting kind food into our bodies, which, if you haven’t noticed already, makes us kinder people! This is because plants are the easiest foods for our bodies to digest. Because it requires less energy for our bodies to digest, we have more energy to carry out our everyday lives! It’s a beautiful cycle, huh?

Okay, off my soapbox and onto the day!

Workout

This morning, I kept it short and sweet with my workout. After 20 minutes of sweating it out with Karena & Katrina during the Surfer Girl routine, I felt pleasantly exhausted and energized. It’s the best kind of feeling after a solid workout, wouldn’t you agree?

Breakfast

This morning was sunny, crisp, and cool. I wanted to enjoy a warm piece of fruit before digging into my oats, so I sliced up an apple, drizzled it with coconut oil, cinnamon, and nutmeg and placed it in the oven at 350 degrees for 15 minutes.

Meanwhile, I assembled my chocolate peanut butter protein pudding oats! Say that five times fast. ;-) I used my usual recipe and added 2 Tbsp. of peanut flour to the mix. So. Freaking. Good. I crave it all the time!

#jadorelavie Moment

I got some work done before heading to Trader Joe’s for my grocery haul. On the way, I sipped on a green juice I’d picked up from Wildflour this past weekend. 

When I eventually develop a solid savings account, my first “big girl” purchase will definitely be a Vitamix so that I can make my own juice. Until then, Wildflour does me just fine.

After crossing all of the vegetables off my list, I spotted these two ladies and had a total #jadorelavie moment.

They were besties and had the best time checking out all of the goodies that Trader Joe’s has to offer. It was their first time in the store and the lady on the right was so excited about trying some new muffins for breakfast. Be still my heart; they were so adorable! This will so be my best friend Raquel and I when we’re old ladies – lookin’ fly and shopping at the grocery store!

Lunch

After a successful grocery shopping trip, I came home and made some lunch! I threw together a Mediterranean-inspired salad with  spinach, cabbage, red peppers, broccoli, hearts of palm, kalamata olives, hummus, and tahini. I tossed some fresh parsley in with everything, which gave it that extra something special. It was incredible! 

Of course, sweet potatoes with organic ketchup for dipping were on-hand. I swear I’m going to turn into a sweet potato any day now.

Snack

The remainder of the day was filled with work from home. Mid afternoon, I grabbed  some dried figs and got to snacking. I happen to like dried figs much more than fresh. They’re sweeter! The dried Conadria figs from Trader Joe’s are out of this world.

The rainbow is shining bright today for sure!

Tonight, I’m going to a friend’s house for dinner. We’re trying out a new recipe and, if all goes well, I’ll be sharing it with you on Thursday! Keep those photos coming!

    Those two ladies are awesome! I love little old ladies and hope I am still that excited about grocery shopping when I’m old…and have a good friend to shop with :)

    I’m going to turn into a sweet potato soon too… or a pumpkin! I can’t get enough of either lately!

      Bahaha – it will TOTALLY be you and Meg! ;-) …at least we can check vitamin A, potassium, and magnesium off our lists. ;-)

    Your lunch looks way amazing as per usual! I totally thought the beginning of this post said you wish you could “eat you all” with every meal. Ha! Not exactly plant based.

  9. Love those ladies grocery shopping together! Sometimes I see older people & my heart just swells. What stories they all must have! TJ’s figs are a fav of mine lately as well!
