#plantPOWER Day 12: Dinner & New VLOG!

Hey plant lovers! It’s day 12 of the #plantPOWER challenge and it’s dinner time! Unlike my lunch, dinner is not a salad. I usually crave warm and cozy foods for dinner. Last night, I roasted some veggeis and tried a new-to-me-and-almost-allergy-free (you like that rhyme?) veggie burger by a newer brand on the market called Hilary’s Eat Well.

I picked up the veggie burgers at a local natural foods market near my condo and almost squealed when I saw the ingredient list included quinoa, sweet potaoto, coconut oil, and psyllium husk! This #plantPOWER foodie was totally onboard! I couldn’t wait to make one and share my thoughts with you. I’m happy to report that it was insanely delicious. I drizzled my curry hum-nooch sauce (1 Tbsp. hummus, 2 Tbsp. nutritional yeast, 2 Tbsp almond milk. 1 tsp. curry, 1 tsp. garlic powder) over it and served it with roated Brussels sprouts and sweet potato wedges. In a word, YUM.

If I’m craving something else warm and cozy, I might opt for my Warm ‘n Fuzzy Vegan ChiliThai Chickpeas in a Peanut Sauce, or Baked Tofu & Sweet Potatoes ina a Curry Hum-Nooch Sauce. With greens of course! ;-)

Workout & Bod Pod Update

This morning, before work, I busted through ZWOW #19. I love this workout because I can easily adjust it to fit with my lower intensity workouts. I subbed the pistol squats for single-leg hops and finished in just over 20 minutes. ZWOWs always leave me feeling so energized!

FYI: The lower intensity stuff is going well! I am still doing one HIIT workout per week and toning with lighter weights or yoga on other days. Some days, it’s hard because I do miss doing HIIT three times a week and I do miss strength training with heavier weights, but I know this is the right thing for my body. Taking these steps is making me grow tremendously in my spiritual practice; I feel more connected to my spiritual self than ever. This journey with myself has been nothing but a blessing!

    I love the ingredients in those veggie burgers! Packed full of some of my favorite things! I’m loving the plant power challenge! It has been so helpful to me for adding more fruits and veggies into my meals as well as plant based protein too!

  2. Umm I want to do plant power next time! I’m not sure why but I thought I had to be vegan for it so I skipped out. I’m slow… hahaha you’re adorable and I tell you this every time<3

  4. Those veggie burgers sound so delicious! Actually your whole meal looks awesome. Veggie burger + sweet potatoes + brussels sprouts is one of my favourite meals. :D
