#plantPOWER Day 15: Nighttime POWERsnack!

 Workout

This morning, I picked up an old favorite DVD of mine: The Physique 57 Express 30-minute Full Body Workout. Whoa, nelly! It’s been awhile since I’ve completed one of Physique 57′s workouts and I’m so glad that I did. I certainly felt the burn!

I continued to roll with the barre theme and completed the Tone It Up Beach Barre workout. My thighs were really feeling it today so I made sure to cool it down with some deep yoga stretching with Tara Stiles’ Yoga for Getting Out of Your Own Way. I felt amazing afterwards!

#plantPOWER Pumpkin POWERsnack

Say that five times fast. Seriously; it’s hard! We’ve got pumpkin overload today, people. I’m sure you’re okay with that, right? Right. I’m a big fan of POWERsnacks. I find that my stomach is happiest and my energy levels are highest when I eat small meals throughout the day, so POWERsnacks are a big part of my day-to-day eats! The past couple of nights, I’ve been resorting to Perfect Fit Pumpkin Pudding with Pumpkin Spice Cashews.

I know, I know.

But before we can make that, we’ve got to make the cashews. Trust me when I tell you that you have to make the cashews. 

Pumpkin Spice Cashews

Prep Time: 5 minutes

Cook Time: 10 minutes

Ingredients

  • 1 cup raw, unsalted cashews
  • 1 Tbsp. coconut oil
  • 1 tsp. pure maple syrup
  • 1/3 packet stevia
  • 2 tsp. pumpkin pie spice

 

Instructions

  • Turn a burner onto low heat (level 2-3).
  • Put coconut oil in the skillet and allow it to melt.
  • Add maple syrup and cashews. Stir to combine.
  • Add pumpkin pie spice and stevia. Stir to combine.
  • Allow cashews to lightly toast, stirring every minute for 15-20 seconds (eyeball the time, no need to be exact).
  • After 10 minutes, or when cashews are lightly toasted, remove the pan from the heat and pour cashews into a bowl.
  • Cover with plastic wrap and place in the refrigerator for one hour.
  • Enjoy!

These cashews make a divine topping for some Perfect Fit Pudding! To make the pudding, all you have to do is combine the following in a medium mixing bowl:

  • 2/3 cup pumpkin
  • 1 packet (or 1 scoop) Perfect Fit protein
  • 2 tsp. pumpkin pie spice 
  • 1 tbsp. unsweetened almond milk
  • Mix it all together, scoop into a serving bowl, garnish with pumpkin spice cashews, and VOILA: you’ve got the perfect #plantPOWER night time snack!

NOTE: I recommend adding more cashews (don’t fear the fat!) – it’s just a more visually appealing when presented this way! ;-)

This POWERsnack would be a great nighttime option. The combination of quality protein, fiber, and fat works to stabilize your blood sugar levels and keep you sleeping soundly through the night! Thought for the day

Every morning, I wake up and do a quick meditiation on a phrase that really speaks to me. I let my mind go, focus on deep breathing, and the phrase almost always comes to me. Today, it was: “Greet the day by saying, ‘You are my greatest adventure.’” I thought this was so fitting, especially for Mondays! The next time your day isn’t going quite the way you might have hoped, take a minute to breath deeply and focus your intention on that quote – because you deserve to make every day your greatest adventure.

    Oo BB those cashews look amazing. How perfect would they be ground up into a cashew butter after you roast them too?! Eep! And that protein pudding actually looks really good to me. I know that protein pudding isn’t normally my jam but I think I would like this one! Make it for me next time I visit? <3. Haha I knew Danielle (above) would flip for this.
