Vegas Recap Part 1

Today is the day. After eight days in Las Vegas, we’re heading home to Boston! To say that we are elated would be the understatement of the century. If you’ve been to Vegas, you’ll know what I mean. If you haven’t been to Vegas, you’ll know what I mean once you experience its crazy lifestyle.

In light of this, Kasey and I are going to postpone announcing the #plantPOWER winners for a few days. I’m so sorry! Due to Hurricane Sandy and circumstances beyond our control, you’re just going to hold out for a short while. SIT TIGHT! It’s worth it. :-)

I guess I never realized that Las Vegas was literally a city dropped in the middle of the desert. It is actually quite beautiful. We were really amazed at the architecture of the giant hotel skyscrapers and the scenic mountain views. Raquel, Lydia, and I stayed at the gorgeous Aria Resort & Casino.

We were treated like absolute queens for our entire stay. I’d never stayed somewhere so beautiful and really tried to soak up every moment and opportunity. Like waking up for a super early morning workout and coming back to sit down, sip coffee, and watch the sun rise.

When it comes to vacation, I strive to eat healthily as best I can because it makes me feel good. I don’t take it too seriously, though, and certainly welcome the opportunity to enjoy foods that I might not normally enjoy otherwise. It’s vacation after all!

For our first day of travels, I packed Raw Revolution bars, Vega bars, Kit’s Organic bars, dried figs, and a salad to enjoy on the plane. This saved me time and money! Win. I also purchased a coconut water at the airport to prevent over-dehydration from flying.

We arrived in Vegas in the early evening on Wednesday. The three of us were starving and all agreed that dinner was going to be our first plan of action. After perusing the Aria’s lineup of restaurants, we agreed on Javier’s mexican restaurant. I ordered a make-shift salad of romaine, tomatoes, cucumbers, peppers, black olives, black beans, mild salsa, and guacamole.

It was good but nothing to write home about.

*Side note: Las Vegas is one of the least vegan-friendly cities known to man. I tried to make the best of it but options were very slim and very expensive.

We were all kind of jet lagged but wanted to go to Whole Foods to pick up some groceries for the coming days. We hailed a cab (which ended up costing a total of $30) and went through with our mini grocery haul. Can you guess which groceries are mine?

I went with unsweetened almond milk, Attune Foods’ Erewhon Buckwheat & Hemp cereal, peanut flour, fruit, veggies, hummus, kombucha, and flax crackers. The snacks behind our grocery haul were so pricey. Eight dollars for a bottle of Fuji water?! HA. After our trip to Whole Foods, we decided to be bums and just chill in our hotel room for the night. We’d traveled for quite some time and wanted to have all the energy in the world the next morning!

For some ungodly reason, Raquel and I were up at 5:00 a.m. The three hour time change can really mess with  you! We decided to take advantage of the hotel gym and fit in a good workout. I did my own makeshift full body toning workout with lighter weights and Raquel did a plyometric-based workout. Naturally, elevator muscle shots were necessary.

We took our time and finished with some stretching before heading downstairs to grab coffee and enjoy breakfast in our room.

Unsweetened almond milk and peanut flour poured over this cereal is a dreamy combination. In total, this bowl of cereal had 10 grams of protein! Holla. Once the sun was bright and shiny, we decided to get ready, explore, and take on the day!

First, we walked over to the Aria’s one of four pools. I know, I know. We were in total awe!

Next, we decided to explore the strip. We saw the Monte Carlo water fountain, the roller coaster, and so much more.

After some walking and a short bus ride, we arrived at our destination: Madame Toussaud’s Wax Museum! We had way too much fun in there. I got to hang out with a bunch of my old buddies. ;-)

Later that night, we went to HAZE, the nightclub located right inside our hotel. We know a few of the guys who work for HAZE so we were given VIP seating and had an absolute blast dancing the night away and sipping on vodka-cranberries. Like I said, guys, it’s vacation. You gotta live it up!

  6. I am heading to Vegas for my 4th time next week and can’t wait.
    It does take a little work to get the proper food…but a good source of restaurant reviews, should you go back, is at Daily Garnish. Emily went and was able to find food…although again it took a little work.

    Looks like you all enjoyed yourselves :)

  10. PROPS to you for making good choices in vegas!!! Forreal, there were probably soooo many foods you were tempted to have, and it takes a lot to stick to a healthy lifestyle.

      I wish that I could tell you I tried a bunch of foods but, to be honest, the vegan options were SCANT in Vegas. It was easier for me to eat healthy because the only options were veggies, beans, salads, and baked potatoes. Ha!

  12. It is definitely hard to eat vegan in Vegas. I live 2 hours from there so I end up going often and the last time I went there it took me a very long time to find a place that had even one vegan option.

      I totally agree, Kate! I usually enjoy searching for vegan-friendly options and hunting down hole-in-the-wall vegan joints. Unfortunately, it was barely even possible with Vegas! Thankfully, we did find some yummy options though!

    Oh wow. Kevin is beautiful. And so are you ladies! Can’t get over all the cute outfits I saw you wearing on this trip. Obviously headed to the Fashion page ASAP. Vegas is a foodie dream but when you are vegan I have to admit options are limited. Smart to come prepared with snacks & go to Whole Foods! I wish you guys had gotten to Canyon Ranch Grill – options galore!

      We didn’t have the opp to go there. Honestly, I totally forgot about it! MY BAD. Haha. You’re the best. If I eve go back to Vegas (doubt it, lol) I will DEFINITELY be visiting Canyon Ranch in your honor, bb!

    I’m SO glad you’re finally on your way home. What a nightmare of a delay.

    I’m kind of worried to hear that Vegas isn’t vegan friendly. Were there any more vegetarian options than vegan? We have a trip planned in January and I’m trying to figure out where to go/what to eat.

      It was a bit of a nightmare but we’re all so grateful to be home and that we have a home in general. :-) Shoot me an email about vegan-friendly restaurant options in Las Vegas and we’ll chat. I’ll also be doing a separate post on that.
