#plantPOWER Round II: D is for…Dream it and DO IT!

We’re on day four of #plantPOWER already! How much fun are you guys having? Kasey and I have so much fun going through all of the check-ins. Keep ‘em coming! We love them so much that we decided, every day, we’re going to feature two recipes from the day before. We want to get your creations out of the archives and onto the blog!

First up, we have Chocolate Covered Coconut & Strawberry Chia Pudding from Alyssa.

Alyssa said, “This may seriously be one of my fav days of the ENTIRE month! Earlier in the week, the lovely@karenakatrina posted a Strawberry Coconut Juice and I just knew I had to give it a try… And so I did, with a twist! I blended a 1/2 cup each Chocolate Zico water & Coconut Almond Milk with about 4 strawberries. To that I then mixed in 3tbsp of chia seeds & popped it in the fridge to set. I topped it with cacao nibs, coconut flakes, and Powercake’s Healthy Chocolate sauce (I added some cinnamon to that for an added yum factor) . Ooh, and it’s all served in a little coconut shell! Just for a little added cuteness!! Let me tell you, it is DELICIOUS and I will definitely be serving it up again tomorrow for Bachelor night!”

Next up is our girl @gamene with a Cauliflower Crust Pizza!

She said, “Ever since I discovered cauliflower-crust pizza I’ve been hooked! Similar to yesterday’s broccoli bread, this is made by pulsing cauliflower in a food processor until rice-like in consistency and then mixing with spices/flavorings and a binder (flax egg or Ener-G egg replacer). The full recipe is earlier in my IG feed; adapted from @eatingbirdfood(awesome site!). Cauliflower is a#cleancarb (two more important “C”s!!) and is so much healthier for your body to process in the evening than traditional wheat-based crust. Plus, it’s chock-full of potassium and Vitamin C (what better “C” for “C”-Day is there than the actual vitamin?!). I topped my crust with Daiya jack, roasted butternut, red onion, and some dollops of pesto from a recent batch I made using kale, arugula, and walnuts.”

D is for…Dream it and DO IT!

Kasey and I were talking on the phone the other day and we both were trying to think about how this challenge really came to fruition. We both went blank. “We just dreamt it and did it,” I said. Everything starts with a vision. You have to picture what you want and envision how you want it to come to fruition. When Kasey and I were creating #plantPOWER, I would sit down and meditate on the layout of my blog posts, the Instagram photos, and the Tweets. Not because I wanted us to have amazing stats – but because I wanted this message to get out to the masses. We both do.

We believe in an inclusive, everyone-is-invited approach. We don’t believe in strict rules and we don’t believe in pigeon-holing people into following every rule to a T. Of course there has to be guidelines to keep things organized but we never set out to transform people into vegans. We simply dreamt of an inclusive challenge that brought people together through plant-based food – and then we did it. We wanted people to open their minds, get creative in the kitchen, and see how adding more plants to their lives adds more richness to their lives – richness in the form of energy, clarity, and strength.

We are here for you and hold space for you. We support your dreams, your decisions, and whatever else you choose to do. We hope this challenge helps you expand your creative side. Dream it and DO it, babes.
