  1. #plantPOWER Pinto Bean Bowl!

    Hey friends! I’m so stoked to see you guys are willing to join me in not texting and driving. Today is day five, baby! Let’s stick together through it.

    Workout

    This morning, I completed an awesome total body mish-mosh of YouTube videos. It left me feeling strong, energized, and a bit sore – all good signs! On the days I don’t do yoga, I look to YouTube and put together a full-body toning routine. I’ve been sticking with the same routine for three to four weeks. Switching it up this often keeps my muscles guessing and keeps me from getting bored. Since this week is the final of my current routine, I wanted to make sure that I shared this one with you!

     

    REPEAT 2x TOTAL!

    You might have seen and/or completed these videos before but doing them in this order really brings on the burn. Mix up your routine this week and give ‘em a go if you feel inclined.

    #plantPOWER Pinto Bean Bowl

    Did you know that we are exactly three weeks away from the next #plantPOWER challenge?! How excited are all of you. The answer should be very! We’ve got some really fun and exciting things in store for you. :-)

    In the spirit of #plantPOWER, I whipped up a pretty rockin’ #plantPOWER dinner last night using one of my favorite protein sources: pinto beans! I love all varieties of beans and eat them on a regular basis. Along with the protein and fiber, we get antioxidants, iron, and a host of other vitamins and minerals. Sign me up!

    Prep Time: 5 minutes
    Cook Time: 15 minutes

    Ingredients

    • 1/2 cup organic canned pinto beans (drained and rinsed)
    • 1 cup Brussels sprouts
    • 4 cherry tomatoes, halfed
    • 1-2 cloves of garlic
    • 2 Tbsp. nutritional yeast
    • 1 tsp. dijon mustard
    • 1/2 tsp. curry powder
    • 2 Tbsp. water
    • 2 tsp. coconut oil

     

    Directions

    • On medium-heat, place coconut oil and Brussels sprouts in a medium-sized sauce pan. Saute until golden brown, tossing occasionally.
    • Meanwhile, in a small bowl, make your sauce by combining nutritional yeast, mustard, curry powder, and water. Set aside.
    • When Brussels sprouts turn golden brown, add tomatoes, pinto beans and garlic to the pan.
    • Add the the sauce, stir, and turn burner to medium-low heat.
    • Allow flavors to blend for about three minutes.
    • Serve!

     

    This dish is super simple and so good. I’ve been favoring simple meals lately (i.e. lots of raw salads and quick dinners like this one). That is one of my very favorite things about living a vegan lifestyle – you can whip up a meal in five minutes and it will most likely rock your world. I’ve been weaving a lot more simplicity into my every day life, with more yoga, more meditation, and less attention to social media. I’ve also began a new journey as a student and I’m excited to share more of this with you! I feel so rejuvenated, refreshed, and ready.

  2. Two 5DSD Recipes!

    When I left for Las Vegas two weeks ago, I told myself there was one rule: THERE ARE NO RULES!

    I’m someone who lives by and loves her routine. I also love lists and planning. It literally gives me butterflies. Nerd alert.

    When my clients go on vacation, we discuss all sorts of behavior modification strategies like packing fruit, veggies, nuts, trail mix, and bars to take with them while they’re walking about. We talk about having their waiter divide their meal in two and hold it in a doggie bag for them. Then, we talk a lot about enjoying every moment and living in a #jadorealvie mindset throughout their vacation. Because, at the end of the day, that’s what vacation is – a break from routine and a break from regimen – not food obsession.

    I’m a fan of pushing myself out of my comfort zone in all aspects of life. When it came to Las Vegas, I threw routine out the window and solely lived in the moment. It rocked. 

    Yes, we met Omarion. Yes, he is a total sweetheart. And no, I still have no idea what any of his songs are. I’m also about 5 inches taller than him. No shame!

    By the end of our stay, however, I was more-than ready for routine. Not in an obsessive way. I just missed my life back home! I also missed preparing and cooking my own meals.

    Raquel mentioned that she wanted to do Tone it Up’s 5 Day Slim Down when we returned from Vegas. I thought about it for a minute and, considering all the sangria, fried falafel and potatoes, and Pop Chips I consumed, thought it would be a nice segue way back into routine and normalcy. I obviously had no intentions to lose weight or inches (I don’t need it and that’s not my goal) but I definitely wanted a cleanse from the foods I enjoyed on vacation. Key word: ENJOY! No regrets, babes. Just love. :-)

    I started the 5 Day Slim Down journey on Sunday and finished yesterday. It was a great challenge and I feel super energized! After taking a break from high intensity workouts for over 4 months (my body is slowly-but-surely responding) I decided to incorporate them back in for the past five days. Raquel and I kicked booty and it felt amazing to consistently push myself to the max. Consistent high intensity workouts are now on the back burner again; I’m going to stick to one per week for now.

    Anyways, back to the #5DSD. I was a little apprehensive going into it because it is a “slim down,” typically used for those who are trying to bust through a weight loss plateau or are getting ready for an event and want to look their best. I shifted my mindset and just challenged myself to embrace the challenge and do my best. Check and check! Raquel slept over my condo and we woke up every morning to HIIT it for 20 minutes. This morning, we completed ZWOW #42 in 14:42. We were total beasts!

    Karena & Katrina asked me to share some of my favorite vegan #5DSD recipes with you, so I’m here to share! Here are my top two favorites from the week.

    Ingredients

    • 4 oz. organic, extra-firm tofu, diced
    • 1 Tbsp. nutritional yeast
    • 1 tsp. spicy mustard (I used Emeril’s New York Deli mustard)
    • 1 1/2 Tbsp. water
    • Generous pinch of curry powder
    • Generous pinch of garam masala
     
    Directions
    • Spray non-stick pan with organic, non-stick cooking spray (I love coconut oil spray).
    • On medium heat, saute tofu for 5 minutes on each side.
    • While tofu is sauteeing, combine all ingredients for the sauce together in a small bowl.
    • After tofu has reached a golden-brown consistency, transfer to a plate.
    • Pour sauce over and enjoy!
     
    Note: This is a great option for your meal two or meal five. You can also serve this with any green veggie you like, but I chose a few Brussels sprouts because…well…I can’t get enough of them!
     
     

     

     Ingredients

    • 1 medium-sized apple
    • 1 tsp. organic, shredded coconut
    • ½ tsp. stevia
    • Pumpkin pie spice
    • Organic, non-stick cooking spray

     

    Directions

    • Preheat oven to 400 degrees
    • Slice apple in half and remove stem.
    • De-core apple by carefully slicing a small hole in the middle of each half.
    • Fill hole with shredded coconut.
    • Garnish apple halves with pumpkin pie spice.
    • Bake apple for 20 minutes, sprinkle with stevia, and enjoy!
     
    Note: This is a great option for your “one piece!” I absolutely loved this one. It’s clean and simple, so it fits in perfectly with the #5DSD plan!

  3. #plantPOWER Day 16: PerfectFit POWER Smoothie & GIVEAWAY!

    Hey plant lovers! How are you? Today is day 16 of the #plantPOWER challenge and it is POWERsmoothie day! Kasey and I are so, so, so excited to bring you today’s recipe and giveaway, thanks to Tone It Up!

    I first got my hands on Perfect Fit protein powder back in May, when I met Karena and Katrina in New York City. To answer your question, yes, they are just as kind, beautiful, and all-around amazing in person! They radiate an incredible energy. I instantly felt like they were my soul sisters and could have chatted with them forever! K&K have given me so much love over the past year and Kasey and I just knew we had to have Perfect Fit be part of the #plantPOWER challenge. It’s just an organic and natural match – perfect if you will. ;-)

    Perfect Fit Power Smoothie

    It’s a smoothie packed with the “triple P threat:” Perfect Fit, pumpkin, and peanut flour! Ohhh yes, friends. This smoothie has over 20 grams of protein, omega 3′s, fiber, and a host of vitamins and minerals! All you need to do is combine the following in a blender:

    • 1 packet (or 1 scoop) of Perfect Fit protein
    • 1/2 banana
    • 1 cup unsweetened Almond Breeze milk
    • 3 Tbsp. organic pumpkin puree
    • 2 Tbsp. peanut flour
    • 1 Tbsp. chia seeds
    • 3 tsp. pumpkin pie spice
    • 1/2 tsp. pure vanilla extra

    It is kind of tastes like October in smoothie form, or a Perfect Fit harvest in your mouth. Capeesh? If you don’t have peanut flour on-hand, you can omit it. Trust me when I tell you that it will be just as delicious!
