    Happy Saturday, friends!

    Matty and I are spending the entire day together in Boston and we’re so pumped. This is the first day since New Years Eve that we’ve been able to spend a full day together. I’ll be chronicling everything on Instagram, so you can keep tabs on me there.

    I’ve got a video for you to watch. It’s so captivating and I hope you’ll share it with everyone you know. Matty introduced it to me this week and I was so riveted that I had to share it with you.

    I know that bullying is constantly talked about in the media, but it’s for good reason. I was bullied in elementary school for wearing glasses. The boys in the back of the bus called me “four eyes.” Real original, dudes. I was bullied in high school for my fashion choices (think uber bohemian…are we shocked?). The girls in the back of my French class would snicker, talk about me behind my back, and call me a “wannabe vegan.”

    It’s cool now (some of those girls actually read my blog – hey chicas!) but it wasn’t cool then. I felt broken, torn, and incomplete. I didn’t know that I had everything I needed inside of me. I thought that I needed everyone to like me in order to be happy when, in reality, all I had to do was like myself.

  2. Vanilla Chai Protein Pancakes with Peanut-Maple Glaze

    I am not your typical baker. I don’t like to measure things. I don’t like to be precise. In fact, most of the recipes that I come up with are straight-up intuition. I prefer throwing stuff into a bowl with praying that it works. ;-)

    Last week, I used my intuition and inspiration in the form of Lori, Michelle, and Kasey to create a plant-based pancake of my very own! I was inspired by Lori & Michelle’s amazing chia protein muffin and Kasey’s awesome concoction that she made for me while visiting last month (Wah, I miss you sister!).

    Well, I have news: it was a success! There’s no dairy, no gluten, no eggs, and LOTS of flavor. I recommend sticking to Life’s Basics protein powder. It’s super delicious, clean, and really holds up well for these pancakes.  I love how easily it forms into a pudding and I love the clean ingredients list. You can find Life’s Basics at Whole Foods for $29 per tub and Vitacost sells it for $17 per tub, so it’s really affordable! Anywho, back to these wonderful pancakes.

    I know that you’re probably sick of seeing protein pancakes, but I really wanted to create one that was easy to make, delicious, and didn’t require a lot of baking skills. Check, check, and check. Your #plantPOWER wishes have been granted.

    Vanilla Chai Protein Pancakes with Peanut-Maple Glaze

    Serves 1
    Prep Time: 2 minutes
    Cook Time: 15-20 minutes

    Ingredients

    • For the pancake
      • 1 scoop Life’s Basics vanilla protein powder
      • 2 Tbsp. chia seeds
      • 1 packet stevia
      • 1 tsp. pumpkin pie spice
      • 1/2 tsp baking powder
      • 7 Tbsp. water
    • For the glaze
      • 2 Tbsp. peanut flour
      • 2 Tbsp. unsweetened almond milk (water is fine too)
      • 1 tsp. pure maple syrup

    Directions

    • Preheat oven to 375 degrees.
    • In a medium-sized bowl combine all dry ingredients. Stir until well blended.
    • Add water and stir until you have damp batter.
    • Gather batter in our hands and form into a loose ball.
    • Place on a small baking pan or on a cookie sheet and pat batter down until it forms a flat pancake.
    • Bake for 15-20 minutes, or until the edges start to crisp. Then, remove from oven.
    • While pancake is baking, combine peanut flour and almond milk (or water) in a small bowl. 
    • Drizzle peanut flour sauce and your 1 tsp. of maple syrup over the pancake.
    • If desired, garnish with organic shredded coconut. If not, enjoy!

    Dessert for breakfast, baby! The chai flavor is spot-on and the peanut-maple glaze really takes it over the top. When you’re craving pancakes for breakfast…or lunch…or dinner…it’s perfect! I actually enjoyed one yesterday after teaching Love Your Legs class at Mind Body Barre.

    A Course in Miracles says there is no order in miracles. This means that no miracle is better than another. All miracles are equal opportunities to change our perceptions from fear to love. When we change our perceptions to love, we are in a state of bliss. This state of bliss allows us to truly believe in this concept of Oneness in miracles (i.e. that no miracle is “better than” another miracle). If you wake up one morning and your first thought is, “I love you, body,” that is just as much of a miracle as you meeting, say, Ellen DeGeneres later that evening. 

    This is part of the reason why I created this space for us to share our moments of joy. Every single J’adore la vie moment is a miracle. They are all equally beautiful and that makes them equal miracles. This means we are all equal miracle workers. Holla!
