  1. #plantPOWER Round II, Day 3: C is for…Creamy Coconut-Curry Roasted Veggies!

    When it came time for me to create a recipe with foods, herbs, and spices beginning with the letter “C,” my mind was spinning! Cashews, cinnamon, coconut, curry, clementines – there are so many incredible choices! I ultimately decided I wanted to make a new Indian-inspired sauce. If you peruse through my recipes, it’s no secret that I’m slightly obsessed with curry. So, today, the obsession continues. ;-)

    We’ve got curry, shredded coconut, and cinnamon, all of which have outstanding #plantPOWER benefits! A compnonent in curry called curcumin shuts down genes that trigger the onset of breast cancer. Coconut is fantastic for heart health and improved digestion. Cinnamon contains polyphenols, antioxidnats that help reduce the risk of heart disease. As you can tell, we have a #plantPOWER-full recipe on our hands!

    Serves: 2-4
    Prep time: 5-10 minutes
    Cook Time: 25 minutes 

    Ingredients

    Roasted Veggies

    • 1/2 eggplant, diced
    • 1 cup Brussels sprouts, diced
    • 1/2 medium sweet potato, diced

     

    Creamy Coconut Curry Sauce

    • 1/2 cup raw sunflower seeds
    • 4 Tbsp organic shredded coconut
    • 1 cup unsweetened almond milk
    • 1.5 tsp curry powder
    • 1/2 tsp garam masala
    • 1 tsp garlic powder
    • 1/4 tsp pumpkin pie spice
    • 1/2 tsp stevia

     

    Directions

    • Preheat oven  to 450 degrees.
    • Spray a large roast pan with organic non-stick cooking spray and place veggies in the pan.
    • Spray the veggies with the non-stick cooking spray and place into the oven for 20-25 minutes.
    • While veggies are roasting, combine all sauce ingredients in a blender or food processor.
    • Pulse until smooth. 
    • When veggies are done roating, transfer them to a large sauce pan on low-heat.
    • Pour sauce over the veggies are stir until well combined. Add a few Tbsp of almond milk if desired.
    • Plate and garnish with extra shredded coconut!


    There are no words, my friends. If you love curry, you’ll love this recipe. If you’re going grocery shopping for the week, pick up the ingredients here that you might not have on-hand and get to making this dish! While you’re at it, you can make Kasey’s Cheesy Basil & Butternut Quinoa too! Talk about a homerun #plantPOWER meal. Don’t mind if I do!

  2. Date Night at Veggie Fun!

    One of Matty and I’s favorite things to do is to seek out new vegan-friendly restaurants. Even though Matty isn’t vegan, he really digs trying out new vegan foods – especially local hole-in-the-wall restaurants. On Wednesday night, we ventured to a new vegan restaurant in downtown Providence called Veggie Fun.

     What a fun name, eh? I know, I know. I’m so punny. ;-)

    The restaurant opened within the past year and serves a wide variety of Pan-Asian food, all of which is vegan!  Matty and I both agree that we’re so lucky to live in such a vegan-friendly area with so many amazing restaurants less than 20 minutes from our doorstep. It’s definitely something we don’t take for granted! Veggie Fun turned out to be a welcomed new addition to our local restaurant circuit.

    The lighting was super dim, which definitely amped up the romantic ambience … but didn’t really mesh well with the act of picture-taking.

    Summer Rolls

    We began with summer rolls, Vietnamese-style raw rolls with shredded carrot and lettuce, firm bean curd (tofu), and basil leaves. The rolls came with your run-of-the-mill moo-shu sauce. I really enjoyed them! Summer rolls are my favorite appetizer to order and these definitely didn’t disappoint my taste buds. All of the ingredients were fresh and fabulous!

    Matty and I both opted to have miso soup before our entrees. It was just the thing to warm us up, considering it was a mere 13 degrees outside. It has been freakin’ freezing lately!

    Boston Lettuce Wraps

    After much debate, I decided on the Boston Lettuce wraps. This was a simple pile of shitake mushroom, turnips, celery, carrots, and bean curd, sauteed in a light brown sauce and topped with pine nuts. I loved them. The flavors were simple and fresh, just how I like my meals, and the pine nuts were a nice surprise! I happily cleared my plate. No surprise there!

    This is his “I’m 4-years-old and can hardly wait to eat!” face. What a gem.

    We’re fun.

    Anyways, back to dinner. Matty ordered the General Gao’s “chicken” with broccoli. He was a big fan (as if the smile didn’t already say it).

    Overall, Matty and I really enjoyed our meal. We can’t wait to head back and try something different! The service was quick, efficient, and friendly too. Our waitress was so rad. I told her that she was such a sweet waitress and thanked her. “Oh! I was just saying how beautiful your smile was. It’s so nice!” she said. My heart melted into a puddle. 

    After a cold walk to the car, Matty and I rocked out to Maroon 5 and ended the night with The Biggest Loser. We are loving this season’s  contestants. Right now, I’m rooting for Jackson. I just love his attitude and his tenacity! Are you watching at all?

  3. Sexy Salad of the Moment

    Sexy: highly appealing or interesting. 

    We are all highly appealing and interesting. That means we’re all sexy. HOLLA!

    For me, this year is all about connecting with myself on a deeper level, welcoming the things that serve me, and getting rid of the stuff that doesn’t serve me. It’s not about restriction; it’s about embracing the things that make me thrive … the things that make me feel sexy. I have a sexy in my skin update for you! I’m on day seven of my goal to continue my reduced  (read: not omitted!) intake of gluten and added salt. I feel so amazing, guys. Absolutely no blood sugar spikes and energy slumps. I’ve also noticed increased concentration and creativity. I do not feel deprived. I feel alive and content!  Sexy city.

    Speaking of sexy…

    Salads rock my world. I enjoy one almost every day for lunch and sometimes have another for dinner. The reason I love them so much is because they’re so easy to make and the combination of ingredients you can use is literally endless. They make me feel energized, which makes me feel incredibly sexy in my skin. Salads make sticking to that 2013 goal much easier! A slew of my girls are onboard the daily salad train:

     
    I know these amazing ladies aren’t the only ones; and I know that I’m probably preaching to the choir; and I know you probably think you don’t need any more salads to add to your repertoire  Well, think again. I’ve got one that I’ve been returning to at least three times a week for the past few weeks – because it’s just that good.

    From a health standpoint, it covers all of your macro-nutrient bases (carbs, protein, and fat). From a taste standpoint, it covers all of your texture bases (crunchy, creamy, soft, and chewy). From a flavor standpoint, it is just an explosion of delicious plant-based, alkalizing goodness in your mouth. What could be sexier than that?

    Sexy Salad of the Moment

    Ingredients

    • 2-3 large handfuls of kale
    • 4 baby carrots, julienned
    • 1/2 cup broccoli florets
    • 2 forkfuls of sauerkraut
    • 4 kalamata olives, sliced in halves
    • 2 Tbsp. hummus of your choice
    • 3 Tbsp. hemp seeds
    • 1-2 tsp. coconut aminos
     
    Directions
    • Add all ingredients to a large bowl.
    • Stir until all veggies have a beautiful coat of sexy, creamy goodness.
    • Enjoy every bite slowly – chew with passion, baby!
     
     

    I know this is just a simple salad but it really is so delicious! I love to serve it with a roasted jewel or garnet yam wedges for a complete meal. Make it, love it, and nourish that beautiful body of yours! For all my Tone It Up girls, this is a perfect “lean clean, and green” meal option for the Love Your Body challenge. :-)
